Our Cajun Chicken Spice Mix 

This rub gives your bird a tinge of heat, with some complex depth of flavors. Take two tablespoon rub down your bird. Once it is spiced, let it sit in the refrigerator for two hours to get that skin nice and crusted and dry. Our favorite is to rub down some turkey legs and put them in the smokers, but you can cook how ever you want.
