Mahleb or Mahalepi is made from the seeds of the St. Lucie Cherry. The cherry pits are cracked to extract the soft and chewy seed kernel.
It is typically used in small quantities to intensify sweet foods and cakes, and desserts. The taste of seed has been compared to Marzipan.
These seeds have been used in Middle Eastern Cuisines for centuries, but is only more recently making its way into American recipes books.
