The New Mexico Chile has subtle heat with a touch of sweetness. As it’s name suggests, the peppers are commonly used in the cuisine of New Mexico–so much so that waitresses there often ask customers “red or green?” Residents of New Mexico do have heated debates about which color chile is best.

New Mexican Chili is considered a Mild heat Chili, so it does depend on your tolerance to heat. If I add heat this is not the chili I would choose, but if I want depth of flavor this is highly recommended
