Alum is an acidic powder that acts as a preservative.

It can also go into baking recipes, to aid in leavening.
Some chefs might know Alum Powder by its other names: aluminum potassium sulfate or potash alum.

Culinary Alum
I bought alum elsewhere online which turned out not to be culinary, so I’m thankful to finally find the right stuff at such a low price. Consistency is more like granules than powder (which is evident in the pictures).
