Fennel Pollen is an amazingly aromatic spice–like fennel seeds, only sweeter and much more intense. The pollen is made up of many small fennel flowers and is considered the most potent form of fennel available.
Due to the highly concentrated flavor, small amounts of fennel pollen are often enough to add bursts of flavor to most any dish (though it is especially good on seafood).
Fennel pollen is also popularly mixed with olive oil and served over bread in Italy. Delicious!
