Our food grade Gellan Gum is used as a emulsifier, thickener and stabilizer. It is a gelling agent and can be used as a vegan alternative to gelatin. It can also be used more sparingly than other gelling agents, as it is twice as strong as agar.

My favorite hydrocolloid ingredient
I’ve enjoyed experimenting with this ingredient. It always works the best for making firm vegetarian gels (i.e. without gelatin). I initially found this — labelled with ‘spicespecialist.com’ on the bag — being sold on Amazon, and I’ve used about 0.75 lbs so far. Unfortunately, I’m anticipating myself to deplete the remaining amount that I have very soon. It’s difficult to find, so I wish Spice Specialist could put it back in stock. They aren’t selling any right now. It’s a great product though. Maybe it just isn’t as popular as it could be. I’m certain that will change someday!

The popularity of this product comes in waves, but, unfortunately that is not the issue we are having. Along with several other things in the world right now, these thickening agents are very hard to find. We are still unsure of a time frame when we will be able to get this back into stock. You could try one of the similar emulsifiers to see if that would work. I have heard of people using Agar Agar as a substitute, but it will come down to your prefernce.
