Green Peppercorns are most commonly used in Thai and other Southeast Asian recipes. The berries are dried before they reach maturity, which is what gives them their green color and unique flavor.
The flavor of Green Peppercorns is light, spicy, fruity and sharp. Since the flavor is not as intense as the more familiar black peppercorns, they work best on lighter foods.
These Green Peppercorns are dried (not preserved in brine) so we recommend using them quickly or storing them in a cool, dark place.
