Annatto comes from achiote trees and is used as both a food coloring and flavoring. Many Spanish dishes that call for saffron are flavored with annatto. It is also used to give foods like cheddar cheese their vibrant colors.
Annatto has a peppery, nutty flavor.

I mostly use it to add red color to certain foods… works well for what I need it for.
