Crispy Fried Chicken with Hondashi Recipe
This recipe adds Asian inspired flavor to classic fried chicken using a unique ingredient: hondashi!
Hondashi (or Hon Dashi) is considered to be the “secret ingredient” of some of the best chefs in Japan and all the world.
Hondashi is a uniquely flavorful and uncommon ingredient that is generally used as stock, but also adds a surprising kick to crispy fried chicken. In addition to the salty flavor you’d expect from a stock, it also has a slightly sweet and smoky undertone.
Crispy Fried Chicken with Hondashi Recipe
Ingredients
- 3/4 lb Chicken Tenderloins, cut in half lengthwise
- 3 tbsp Soy Sauce or 1 tsp Soy Sauce Powder
- 1 tsp Hondashi
- 4-5 tbsp Cornstarch
- 1-3 pinches of Fine Salt
- 1-3 pinches of Black Pepper
- Vegetable Oil for frying
Instructions
- Mix soy sauce and hondashi together in a large bowl.
- Stir in chicken pieces and mix until fully coated.
- Cover and refrigerate for at least 30 minutes.
- Remove bowl from refrigerator and add corn starch, mixing well.
- Heat vegetable oil in a large skillet until VERY HOT. Fry chicken pieces in batches until golden brown.
- Drain briefly on paper towels. Sprinkle fine grain salt and black pepper to taste.
