Note that Dutch cocoa powder cannot always be used as a substitute for natural cocoa powder. Dutch process cocoa lacks the acids needed to leaven baked goods. When baking with Valrhona cocoa powder, we recommend that it be used with baking powder instead of baking soda. If used with baking soda, the lack of acids in Dutch process cocoa powder may prevent your baked goods from rising. For best results, be sure to use the same type of cocoa powder your recipe calls for.
