N-Zorbit M Tapioca Maltodextrin is extracted from tapioca using a natural enzymatic process. It has a neutral smell and taste which imparts no extra flavor in food when used as additive material.
Tapioca Maltodextrin (AKA malto or maltosec) has a smooth texture that makes it an ideal fat substitute in desserts and sauces. It is often used as a vegan gelatin.
In molecular gastronomy and modernist cooking, Tapioca Maltodextrin (specifically N-Zorbit M) is used to powder fats. N Zorbit M can transform anything with enough fat into a melt-in-your-mouth powder. You can even turn non-fat liquids into powder just by adding heavy cream.
Some common powder flavors derived from tapioca maltodextrin N-Zorbit M are caramel, nutella, peanut butter, and even bacon!
To make most powders, start with about 40% Tapioca Maltodextrin N-Zorbit M. Add more in small quantities until you reach your desired consistency. It’s that easy!
Note: This product is N-Zorbit M. There are other types of tapioca maltodextrin, but only N-Zorbit M can be used to powder fats and oils.

tapioca maltodextrin
Useful as an additive to oily ingredients such as ground nuts and seeds. It prevents clumping and allows you to produce smooth coatings with oily materials.
