Amchur, amchoor, or simply mango powder is a spice powder made from dried green mangoes. Mango powder adds sourness and citrus flavor to recipes, much like vinegar or lemon but without the added moisture. It is often used in stir fry dishes, soups, curries, and as a meat tenderizer.
Amchur is a principal seasoning in north Indian cuisine, including Chana Masala. It is prized for its uniquely fruity, sour, and citrusy flavor.
